Bircher Muesli

We always get asked about healthy but also delicious on the go breakfast ideas from our customers. One of our favourite things to have on those super busy mornings is a yummy Bircher Muesli. Each spoon is so incredible creamy and it’s one of the easiest breakfast meals ever. It simply takes five minutes to throw together in the evening and then you can just grab it and go in the morning. It is so full of nutrients that it will easily keep you full and energized until lunch time. Each bowl is made by simply mixing oats with mashed banana and raspberries, lots of almond milk and blueberries, and then an amazing combination of sunflower seeds, chia seeds, pumpkin seeds, maple syrup and cacao nibs. Top your bowl with whatever you fancy, whether that is more berries, coconut yoghurt or any kind of nut butter. If you want to take it one step further you can even use homemade almond milk to make your bowl even creamier.
INGREDIENTS:
- 1 cup of oats (120g)
- 1 over ripe banana
- 1 and a 1/2 cups of homemade almond milk (375ml)
- 1 tablespoon of chia seeds
- a handful of sunflower seeds (30g)
- a handful of pumpkin seeds (30g)
- 1/4 of a cup of raspberries (40g)
- 1/4 of a cup of blueberries (40g)
- a handful of cacao nibs (20g)
PREPARATION:
Start by slicing up the banana, then place the slices in a mixing bowl with the almond milk and raspberries and mash them all together with a fork. Then add in the oats, seeds, cacao nibs and chia seeds and stir together. Place the bowl in the fridge and allow it to thicken overnight. Make a bigger batch and have your breakfast for the next couple of days waiting for you.
